Fish Pickles



Fish Pickle/Meen Achaar
Ingredients
Group A
Items to use


Naimeen (King Fish)
500 grams

Turmeric Powder
½  teaspoon

Salt
1 pinch

Sesame seed oil
150 ml.
Group B
Sesame seed oil
1 teaspoon

Mustard Seeds
1 Teaspoon
Group C
Curry leaf
2 stalks

Garlic
5 cloves chopped

Ginger
1 small piece finely chopped

Green Chillies
6 nos chopped
Group D
Fenugreek powder
1 tea spoon

Kashmiri Chilli powder
1 teaspoon

Red chilly Powder
2 teaspoon

Salt water
To taste

Black Pepper Powder
1tsp

Sugar
½ teaspoon

Vinegar
2 tea spoon
Preparation

Step  1: Clean fish and cut it into 1 1/2 cm size pieces.Add a pinch of salt and turmeric powder with little water and make a paste.Rub this paste on to the fish cuts and keep for half an hour.
Boil some salt in water, get it cooled and keep.
Step  2: Pour little oil in deep pan heat it and crackle mustard seeds.
Step  3: Add all ingredients in Group C and fry it until become slightly brown
Step 4: Mix all items in the Group D in salt water and add fried fish in it and heat it low for some minutes.Keep the same for cooling .Once cooled Pour it in air tight moisture free container for longer time use.

Prawns Pickle / Chemmeen Achaar
Ingredients

Chemmeen/Prawns
500 grams

Asfoetida powder
½ teaspoon

Black pepper powder
1 ½ tea spoon

Curry leaf
2 stalks

Fenugreek seeds
1 tea spoon

Garlic
12 cloves chopped

Ginger
1 medium piece chopped

Green Chillies
6 nos chopped

Mustard seeds
1 tea spoon

Kashmiri Chilly powder
1 teaspoon

Red chilly powder
3 tea spoon

Salt
2 tea spoon

Sesame Seed oil
250 ml.

White Vineger
1 tea spoon

Sugar
½ teaspoon
Group B
Marinade items


Red Chilli Powder
2 tea spoon

Salt
1 tea spoon

Turmeric Powder
1 tea spoon

White Vinegar
2 tea spoon
Preparation

Step  1: Clean the prawns by removing shell ,head and inside.Cut it into 2 cm size pieces.
Step  2: Mix Group B ingredients  to marinade. Rub this on to the prawns and marinate for 30 minutes
Step  3: Heat the oil in a deep pan and fry for 4 to 6 six minutes till it turns slightly  brown.Drain the oil from pawns  and set aside.
Step 4: Heat the Sesame seed oil in a deep pan and crackle the mustard seeds.Add green chillies ginger,curry leaves, fenugreek seeds and fry for 5 minutes.Then mix all the remaining items and remove from heat.Let it cool.Then put it in a air tight container.If you wish to store it for longer period get it keep in refrigerator.
